14 Karat Cake
Note: It is recommended to let the cake set in the refrigerator before serving.

Ingredients

  • For the cake:
  • 2 cups flour
  • 2 tsp baking powder
  • 1½ tsp baking soda
  • 1½ tsp salt
  • 2 tsp cinnamon
  • 1 cup brown sugar
  • 4 eggs
  • 1½ cups oil
  • 1 cup white sugar
  • 2 cups grated carrots
  • 1 8-oz. can crushed pineapple, drained
  • 1½ cups chopped nuts (I prefer walnuts)
  • Coconut flakes, optional
  • For the frosting:
  • ½ cup butter
  • 8 oz. cream cheese
  • 1 tsp vanilla
  • 2 pounds powdered sugar
  • 1 tsp orange juice

Instructions

For the cake:
  1. Combine all ingredients.
  2. Grease and flour 3 9-inch cake pans. Divide batter among the pans.
  3. Bake at 350° F for 35–40 minutes. Cool completely before frosting.
For the frosting:
  1. Cream butter, cream cheese, vanilla, and powdered sugar together. Add orange juice.
  2. Spread over cooled cake.
